FANCY CAKE 1 (1 lb. 3 oz.) pkg. yellow cake mix 3/4 c. salad oil 3/4 c. apricot nectar 1 (3 oz.) pkg. lemon flavored gelatin 4 eggs 1 Tbsp. lemon extract Heat oven to 350 degrees. Combine cake mix, salad oil, apricot nectar and gelatin in a large bowl. Blend together. Add eggs, 1 at a time, and beat thoroughly with an electric mixer after each egg. Beat in lemon extract. Pour mixture into an ungreased angel food cake pan. Bake 45 minutes or until an inserted toothpick comes out clean. Invert cake pan or rack and let cake cool before removing from pan.
