PICKLED PUMPKIN 5 lb. pumpkin (10 c.) 8 c. sugar 1 tsp. whole cloves 1 qt. vinegar 1 Tbsp. stick cinnamon Cut pumpkin into chunk pieces. Heat vinegar and sugar to boiling point; add pumpkin cubes. Place cinnamon and cloves in cheesecloth bag; add to pumpkin mixture. Continue to cook until pumpkin can be pierced with a straw. Place in jars; seal. Makes 6 pints.
