SUGARED PECANS 2 1/2 c. pecan halves 1 c. sugar 1/2 c. water 1 tsp. cinnamon 1/2 tsp. salt 1/2 tsp. vanilla Heat nuts (spread out on a baking sheet 5 minutes at 375 degrees). Combine sugar, water, cinnamon and salt in saucepan. Heat and stir until sugar dissolves and boils. Cook without stirring to a soft ball stage (236 degrees). Beat by hand 1 more minute until mixture begins to get creamy. Add vanilla and the warm nuts and stir until nuts are covered. Separate at once with two spoons. Cool on waxed paper. Stir in covered con- tainer.
