CILANTRO PESTO 2 c. cilantro (fresh coriander), stems removed* 1 1/2 tsp. ground cumin and 1/2 tsp. ground coriander 2 cloves garlic, peeled 1 c. pine nuts or walnuts 1 c. olive oil 2 c. grated Parmesan cheese 1/2 tsp. salt 1 tsp. freshly ground black pepper 1 1/2 lb. medium size shrimp In a blender or food processor, combine cilantro, garlic and nuts. Blend or process for about 30 seconds or until smooth. With motor running, add olive oil in a steady slow stream. Turn motor off and add cheese, salt and pepper. Blend. Makes 3 cups. Serve with 1 1/2 pounds medium size shrimp (fresh or frozen, peeled, deveined and cooked, leave tails on for easy dipping). *Can substitute 2 cups cilantro for 2 1/2 cups parsley, stems removed.
