ROASTED PECANS 3 c. shelled pecans 1/2 stick margarine For each 3 cups pecans, melt 1/2 stick (1/4 cup) marga- rine in shallow baking pan. Stir in pecans, coating with margarine. Roast in a slow 275 degrees to 300 degrees oven for about 45 minutes to an hour or until desired degree of toasting is reached. Stir at about 15 minute intervals. When done, drain on absorbent paper; salt while hot. Be careful not to over- roast. Smaller pecans cook faster; also, the amount of mois- ture in pecans affects cooking time. Small dry pecans toast quickly.
