ZUCCHINI BREAD 3/4 c. salad oil 3 eggs 2 c. grated zucchini 2 1/2 tsp. vanilla 3 c. flour 1 1/4 tsp. baking soda 1/4 tsp. salt 1 1/2 tsp. baking powder 1 tsp. cinnamon 1 c. grated zucchini Blend salad oil with sugar. Beat in eggs and 2 cups zucchini. Beat well, add vanilla and sift in dry ingredients. Mix well and stir in 1 additional cup of zucchini. Pour into 2 greased 7-inch tins. Bake at 325 degrees for approximately 1 hour.
