ROASTED POTATO WEDGES 4 large baking potatoes, about 2 lb. 2 Tbsp. butter or margarine 2 Tbsp. vegetable oil 1/2 tsp. salt 1/2 tsp. paprika 1/4 tsp. freshly ground black pepper Heat oven to 325 degrees. Scrub potatoes thoroughly; cut each lengthwise into six wedges. Place butter and oil in 12 x 8 x 2-inch baking dish; set in oven for butter to melt. Add potatoes; toss to coat well with butter mixture; sprinkle with salt, paprika and pepper. Bake 1 hour until tender, turning potatoes occasionally. Makes 8 servings.
