HORSERADISH SAUCE 2 Tbsp. butter 2 Tbsp. flour 1/4 tsp. salt 1/8 tsp. pepper 1 c. milk or light cream 1/3 c. horseradish 1/4 tsp. dry mustard Melt butter in saucepan over low heat. Blend in flour, salt and pepper. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in milk or cream, horseradish and dry mustard. Heat to boiling, stirring con- stantly. Boil and stir 1 minute. Sprinkle with paprika before serving. Makes 1 cup.
