MOZZARELLA STICKS 1 (1 lb.) Mozzarella cheese 1 c. flour 2 c. bread crumbs 4 eggs, well beaten salt and pepper to taste 1/4 c. grated cheese parsley large amount of oil Slice Mozzarella into finger length sticks. Place in freezer for 2 hours. Take frozen Mozzarella sticks and place in plastic bag with flour, salt and pepper and shake well. Dip floured sticks into beaten egg mixture, then into bread crumbs, back into egg, and again in bread crumbs. (The cheese, pars- ley, salt and pepper should be evenly divided between the eggs and bread crumbs.) Heat large amount of oil in a deep fryer. Place sticks in oil until brown (approximately 1 minute). Remove with slotted spoon, drain on paper towels, keep warm. This mixture works well with zucchini sticks and artichoke hearts.
