TACO TARTLETS The meat forms the crust and the tortillas are the filling. Crust: 1 lb. lean ground beef 2 Tbsp. taco seasoning mix 2 Tbsp. ice water 1 c. shredded Cheddar cheese Tortilla Chip Filling: 1/2 pt. sour cream 2 Tbsp. taco sauce 2 oz. chopped ripe olives 3/4 c. coarsely crushed tortilla chips Preheat oven to 425 degrees. Prepare tortilla chip filling; set aside. In a medium bowl, mix beef, taco seasoning mix and ice water with hands. Press into bottom and sides of 1 1/2-inch mini muffin cups, forming a shell, mounding slightly. Sprinkle cheddar cheese on tops. Bake 7 to 8 minutes. With tip of knife, remove tartlets from pan. Serve immediately or cool and freeze. Variation: For a main dish pie, substitute a 9-inch pie plate for muffin cups. Bake in preheated 375 degrees oven for 45 minutes. Makes 6 main dishes.
