ACCOMPANIMENTS FOR SALADS

The cottage cheese which is used in all the following
suggestions is made by rubbing Borden cottage cheese to a
smooth paste with a little cream or mayonnaise. Season with a
few drops of Worcestershire sauce and a dash of paprika.
Cottage Cheese Carrots: Shape cheese like tiny carrots,
roll in grated carrots, make stems of parsley and serve on
crisp lettuce with French dressing or as a garnish for vegeta-
ble salad.
Cottage Cheese Cherries: Shape cheese into balls the
size of a cherry; sprinkle with paprika or color with food
coloring. Insert a bit of parsley for stems. These cherries
are an attractive garnish for a fruit salad.
Parsley Balls: Shape cheese into small balls and roll
in finely chopped parsley. Cottage cheese balls are good when
rolled in nut meats or paprika.
