ELDERBERRY BLOSSOM WINE

3 gal. water
9 lb. sugar
1 qt. elderberry blossoms
1 compressed yeast cake
1 egg white
2 slices lemon
3 lb. seeded raisins

Mix water and sugar together. Bring to a boil and add
elderberry blossoms. Let cool, then add compressed yeast cake
and the egg white, lemon slices. Let stand 9 days, stirring
every day. At end of 9 days, add raisins. Strain and put in
bottles. Let stand in earthen jar. Please use no aluminum.
