PERFECT HARD-BOILED EGGS Put eggs in single layer in saucepan. Add enough water (cold) to come 1/2 to 1-inch above eggs. Cover and quickly bring to boil. Turn off heat. Remove pan from burner. Let sit 20 minutes. No more, no less. Let set under cold running water for 3 minutes and sit in cold water for 10 more. They'll be perfect every time.
