BRUNCH EGGS

4 eggs, beaten
2 1/2 c. torn fresh bread
2 c. (8 oz.) shredded mild
Cheddar cheese
2 c. milk
2 Tbsp. melted margarine
1 tsp. paprika
1 tsp. prepared mustard
1/2 tsp. salt

Combine ingredients, mix lightly. Pour into greased 12
x 8-inch baking dish. Cover and refrigerate several hours or
overnight. Bake at 325 degrees for 45 minutes or until knife inserted
near center comes out clean. Serves 6 to 8.
Variations: Add 4 ounce can chopped green chilies,
drained. Add 1/4 cup green onion slices. Add 3/4 cup chopped
ham.
