OLD FASHIONED HOT CHOCOLATE

2 (1 oz.) sq. unsweetened
chocolate
1 1/3 c. boiling water
1 qt. milk, scalded
1/3 c. sugar
pinch of salt
1/2 tsp. vanilla extract
marshmallows or whipped cream
(optional)

Place chocolate in top of double boiler; bring water to
a boil. Reduce heat to low; cook until chocolate melts.
Gradually add 1 1/3 cups boiling water, stirring constantly.
Remove from heat and set aside. Combine milk, sugar and salt
in a saucepan. Add chocolate mixture; stirring well. Cook
over low heat, stirring occasionally. Remove from heat; stir
in vanilla. If desired, top with marshmallows or whipped
cream. Yield: 6 cups.
