ROYAL EGGNOG 4 c. milk 1/4 c. sugar 4 tsp. instant coffee powder 1/4 tsp. salt 2 beaten egg yolks 2 egg whites 3 Tbsp. sugar 1 tsp. vanilla In saucepan, combine milk, 1/4 cup sugar, coffee powder and salt. Heat through. Stir a moderate amount of hot mixture into beaten egg yolks. Return to saucepan. Cook 1 to 2 minutes more over low heat. Beat together egg whites, 3 tablespoons sugar and the vanilla to a soft peak. Pour eggnog mixture into preheated mugs. Top each serving with some of the meringue mixture. Makes 8 servings.
