IRISH RAISED BREAD

3 cakes Fleischmann's dry
yeast dissolved in 1/2 c.
lukewarm water
6 c. flour
3 c. raisins
1 c. lemon peel
1/2 tsp. nutmeg
4 Tbsp. caraway seed
1 Tbsp. salt
2 Tbsp. Crisco
1 qt. strong coffee
1 c. sugar
2 eggs

Mix dry ingredients together. Add yeast mixture to
cooled coffee and beaten eggs. Mix and knead well until
spongy. Place in a greased warm bowl to rise. When double in
bulk, knead again and then set into three greased cake tins.
Brush top with melted butter and let rise again until double in
bulk, then bake in moderate oven.
P.S. Add Crisco to coffee when warm. Let yeast stand
for ten minutes in lukewarm water.
