IRISH SODA BREAD

1/2 c. oil (Mazola)
2 eggs, lightly beaten
2 c. buttermilk (Hood)
1 c. raisins
2 Tbsp. caraway seed

Mix ingredients together. Mix together:
5 c. flour (King Arthur)
1 tsp. baking powder
1 tsp. baking soda
1 c. sugar
1 tsp. salt
Preheat oven to 375 degrees. Mix wet and dry ingredients
together. Do not beat. Slowly fold together with a spoon with
a strong handle. Put equal amounts into 2 greased bread pans,
9 x 5 x 3-inches. Bake 45 minutes. Test for doneness with a
toothpick or cake tester. Brush with butter or margarine while
still fairly warm.
