IRISH SODA BREAD

Brown and white soda bread are specialties throughout
Ireland.

White:

1 lb. plain flour
1/2 pt. sour milk
1/2 tsp. bicarbonate of soda
1/2 tsp. salt
Sieve all the dry ingredients together and make a well
in the centre. Add enough milk to make a thick dough. Mix
well with a wooden spoon, bringing in the flour from the sides
to the centre. Add more milk if the mixture seems too stiff.
Lift the mixture onto a lightly floured board and knead light-
ly. Flatten the dough into a circle. Put on a baking sheet,
scoring the top with floured knife in the form of a cross.
Bake in a moderate to hot oven (205 degreesC, Regulo 5) for about 40
minutes.

Brown:
10 oz. whole meal flour
6 oz. white flour
1/2 pt. sour milk
3/4 tsp. bread soda
1/2 tsp. salt
Make as for white soda bread but do not sieve whole meal
flour.
