BARM BRACK Traditional. Eaten particularly at Halloween when a ring is included with the ingredients. Whoever gets the ring will be married within a year. 1 lb. flour 1/2 pt. warm milk 1/2 lb. sultanas 4 oz. currants 2 oz. mixed, chopped candied peel 3 oz. castor sugar 3/4 oz. yeast 2 oz. butter 1/2 level tsp. ground cinnamon 1/4 level tsp. nutmeg 1 egg 1/2 level tsp. salt Sieve the flour, spices and salt together and rub in the butter. Cream the yeast with 1 teaspoon of the sugar and 1 teaspoon of milk. Add the rest of the sugar to the flour mixture; blend well. Pour the warm milk and the beaten egg on to the yeast mixture and combine with the flour, etc. Beat well. Fold in the fruit, chopped peel and the ring, then cover with a cloth and leave in a warm place until the dough is twice as big. Turn out and halve. Place the mixture into two 7-inch cake tins. Cover again and leave to rise for about 30 minutes. Bake in a moderate to hot oven (205 degreesC, Regulo 5-6) for about 1 hour. Test with a skewer before removing from oven. Glaze the top with syrup made from 1 tablespoon of sugar dissolved in two tablespoons of boiling water and return to a hot oven for about 3 minutes. Cool on a wire tray.
