IRELAND'S PORTER CAKE

1/2 lb. butter
1 1/2 c. brown sugar
4 c. flour
4 eggs
1 tsp. baking soda
1 (6.3 fl. oz.) bottle stout
Guinness
1 1/2 lb. raisins
1 tsp. allspice
1/4 lb. mixed peel
grated rind and juice of 1
lemon

Heat stout (Guinness) in saucepan with sugar, butter and
raisins until sugar and butter are melted. Let cool. When
mixture is cool, put into a large mixing bowl and gradually add
sifted flour, allspice, baking soda, lemon juice and rind. Mix
peel and beaten eggs with wooden spoon or electric mixer at low
speed. Pour mixture into greased 10-inch tube pan. Bake in
moderate oven at 325 degrees for a little over 2 hours. Allow to cool
in pan. You can use up to 8 ounces stout.
