BACON AND CABBAGE
(Well-known traditional Irish dish)
2 lb. bacon
1 medium sized trimmed cabbage

Place bacon in saucepan. Cover with cold water and
bring rapidly to the boil. Skim as necessary and simmer for
1 1/2 to 2 hours. About 40 minutes before the bacon is cooked
halve the cabbage and place alongside bacon in saucepan. Bring
back to the boil, cover pan and simmer until cooked. Remove
the cabbage and drain thoroughly. Serve with parsley sauce.
This dish can also be made with corned beef.
