BOXTY ON THE GRIDDLE
(To Serve 4)
1/2 lb. waxy potatoes
1/2 c. cooked, mashed potatoes
1 c. flour
1/2 tsp. baking soda
2 c. milk
salt and pepper
oil for frying

Peel the potatoes and grate into a large bowl. Add the
mashed potatoes, sifted flour and baking soda and mix together
well. Make a well in the center and gradually stir in enough
milk to make a stiff batter. Season well. Heat a lightly
oiled griddle or heavy-based skillet. Drop the batter in large
spoonfuls onto the griddle or skillet and cook over a moderate
heat for 4 minutes on each side until crisp and golden. Serve
hot with fried blood sausage, bacon and eggs.
