POTATO SOUP 8 to 10 potatoes 1 to 2 onions 1 small carrot 1 Tbsp. chopped parsley a bone 2 qt. water or white stock salt and pepper Wash bone and put into pan with cold water and salt. Bring almost to boiling point. Wash, peel and slice potatoes. Wash, scrape and grate carrot. Peel and cut up onion. Add vegetables and simmer 1 1/2 to 2 hours. Wash and chop parsley and add to soup. Season and serve in hot soup tureen.
