SALAD IN A PITA (Ingredients For 4 Servings) 1 (16 oz.) can garbanzo beans, drained and coarsely chopped 1/2 small head lettuce, thinly sliced 1 small red pepper, cut into very thin strips 1 carrot, shredded 1/2 bunch watercress 2 Tbsp. finely chopped red onion 2 Tbsp. vegetable oil 1 Tbsp. red wine vinegar 1 small clove garlic (or garlic salt to taste) dash of salt dash of oregano dash of pepper 4 small whole wheat pita bread 1 small tomato, sliced In large bowl combine beans, lettuce, red pepper, carrot, watercress and onion. In small bowl stir together oil, vinegar, garlic, salt, oregano and pepper. Pour over vegetable mix; toss to coat. Cover and chill at least 1 hour. To serve cut a slice off each pita bread, open, fill with tomato slices and vegetable mixture.
