CROQUE MONSIEUR BLEU

3 Tbsp. butter or margarine,
divided
1 small pear, pared and thinly
sliced
8 slices wheat bread
4 tsp. whole grain mustard
1/2 lb. sliced, cooked ham
2 oz. Blue cheese, sliced

In large skillet melt 1 tablespoon butter. Add pear
slices and cook until just lightly browned. Remove from
skillet. Spread 4 slices of bread each with 1 teaspoon of the
mustard. Top with ham, pear slices and the Blue cheese. Cover
each with slice of remaining bread. In same skillet melt
remaining 2 tablespoons butter over medium heat. Add sandwich-
es; cook, turning once until browned on both sides, adding
additional butter as needed.
