MICROWAVE CARAMEL CORN 1/3 c. butter or oleo 2/3 c. packed brown sugar 1/3 c. light corn syrup 1/4 tsp. baking soda 1/2 tsp. vanilla 1 bag Pop & Serve microwave popcorn, either flavor (3.5 oz.) If using plain regular corn, pop about 2 quarts. In a large shallow baking pan, microwave butter on High until melted, about 1 1/2 minutes. Stir in brown sugar and syrup. Microwave on High until mixture boils, about 3 minutes, stirring once. Microwave on High 3 to 4 minutes without stirring. Stir in soda and vanilla. Stir in popped corn, mixing well. Microwave on 75% power for approximately 5 to 6 minutes, stirring every 2 minutes to coat evenly. Cool com- pletely. Break apart and store in tightly covered container.
