EGG PANCAKE 2 eggs, well beaten 1/2 c. milk 1/3 c. sifted all purpose flour 1/4 tsp. salt 2 Tbsp. shortening for skillet Beat ingredients together in order given: eggs, milk, flour and salt. Heat a 9-inch skillet using 2 tablespoons shortening. (A black iron skillet works best.) Pour batter into the skillet. Let cook on top of stove over medium heat for a minute or two. Then place in a hot oven (425 degrees) and cook from 15 to 25 minutes until pooped and golden brown. Vary the time depending upon the kind of fry pan used. Serve with pat of butter and bacon or sausage.
