NANA'S TEA 2 qt. plus 1 pt. cold water 1/2 c. orange pekoe leaves* handful fresh mint leaves plus extra for garnish 1/3 c. sugar (or to taste) 1/2 c. bottled lemon juice 1 orange, quartered ice cubes water Nana, who is 95, dictated this recipe for me. In a saucepan, combine water, tea leaves and mint leaves. Slowly heat to a boil; steep, covered, for 15 min- utes. Strain through a sieve. Cool the "stock" at room temperature. Refrigerate in jars until ready to serve. To serve, place the sugar and an equal amount of hot tap water in a large pitcher. Stir to dissolve. Add 2 cups cold water, 1 cup tea stock, lemon juice and orange quarters, gently squeezed. Stir with a large spoon. Add 1/2 tray of ice cubes and mint leaves. Pour into tall glasses. Yield: 10 (1 quart) pitchers. *Use 18 tea bags if loose tea is not available. Note: Stock keeps in refrigerator up to 1 week. It may become cloudy, will not affect the flavor.
