MOCK MINCEMEAT

8 c. apples
8 c. green tomatoes
1 lb. raisins (4 c.)
2 Tbsp. cinnamon
1 tsp. salt
1 tsp. allspice
1 tsp. cloves
1 tsp. ginger
1/2 c. cider vinegar
1/2 c. orange juice

Put tomatoes and peeled apples through a food chopper.
Add remaining ingredients and cook until thick. Cook mixture
slowly and stir often to prevent sticking. You can add a
little brown sugar for taste and orange juice if too thick.
This recipe makes about 4 quarts. Fill into sterilized jars
and seal while hot.
Note: 1 quart will make 2 (9-inch) pies. I canned some
in pints for just making 1 pie. You can add the brown sugar at
time of making pie if you think the mixture too tart.
