CORN COB JELLY

12 corn cobs
6 c. water
8 1/2 c. sugar
1/4 c. lemon juice
1 pkg. MCP pectin

Cut corn off corn, place corn cobs in water. Boil 10
minutes; remove from fire, strain liquid through cloth. Measure
6 cups water from cobs, add 1 package pectin. Stir until
dissolved. Bring to hard boil that can't be stirred down.
Stir constantly to prevent scorching; add sugar and lemon
juice. Mix well. Continue stirring and bring to hard boil
that can't be stirred down; boil 3 minutes. Add 1/2 teaspoon
butter or oil to prevent foaming. Remove from heat, skim. Put
in jars and seal. Add peppermint and green coloring if desired.
