BRUNCH SAUSAGE RING

2 lb. sausage
1 1/2 c. cracker crumbs
1 c. chopped, peeled apple
1/2 c. milk
1/4 c. chopped onion
2 slightly beaten eggs

Mix all ingredients well. Pack into ring mold lined
with waxed paper. Refrigerate overnight. Turn into baking
dish. Bake at 350 degrees for 1 hour. Fill ring center with scram-
bled eggs mixed with your choice of green pepper, spring onions
or mushrooms.
