APPLE PUFFED PANCAKE 6 eggs 1 1/2 c. milk 1 c. flour 3 Tbsp. sugar 1 tsp. vanilla 1/4 tsp. cinnamon 1/2 tsp. salt 1/4 lb. butter 2 apples, peeled and thinly sliced 2 to 3 Tbsp. brown sugar Preheat oven to 425 degrees. In blender or large bowl mix eggs, milk, flour, sugar (white), vanilla, cinnamon and salt. Melt butter in 9 x 13-inch baking dish in oven. Add apples to dish. Return to oven until butter sizzles (not browns). Pour batter over apples. Sprinkle with brown sugar. Bake in middle of oven for 20 minutes or until puffed and browned. Serve immediately (pancake will fall as it cools.) Makes 6 to 8 servings.
