BENEDICTINE SANDWICHES

1 (8 oz.) pkg. cream cheese,
softened at room
temperature
3 Tbsp. cucumber juice (1/2
large cucumber, grated and
strained)
1 Tbsp. onion juice (grate and
strain pulp)
1 tsp. salt
few grains cayenne pepper
green food coloring

Cream cheese with spoon or electric mixer and add
cucumber and onion juices. Add seasonings and blend in enough
food coloring to give a light green tint. This recipe makes
enough for 6 to 8 full sized sandwiches. Good on white or rye
bread. Also good as dip if left at room temperature.
