PINEAPPLE MINT JELLY 3 1/2 c. sugar 2 1/4 c. unsweetened pineapple juice 3/4 c. water 1 box powdered fruit pectin yellow or green food coloring 1/4 to 1/2 tsp. spearmint extract chopped mint leaves In large saucepan, mix pineapple juice and water. Add fruit pectin, mixing well. Stir in a few drops yellow color- ing. Bring mixture to a hard boil, stirring in sugar. Bring to a full rolling boil. Remove from heat. Add flavoring. Skim off foam with metal spoon. Pour jelly into hot glasses. Cover at once with 1/8 in hot paraffin.
